- 1 lb. tomatoes
- 2 c. water
- pinch of salt
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 tsp. sugar
- 1 tsp. paprika
- 3 Tbsp. milk
Directions

1Cut the tomatoes into four pieces and cook in slightly salted water until soft.

2Prepare a light roux from butter and flour, thinned with water.

3Put tomatoes through a sieve and add to roux. Season to taste.

4Bring to a boil.

5If sauce is too thick then thin with a few tablespoons of milk.
