Tomato Sauce

  • 1 lb. tomatoes
  • 2 c. water
  • pinch of salt
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 tsp. sugar
  • 1 tsp. paprika
  • 3 Tbsp. milk

Directions

    Cut the tomatoes into four pieces and cook in slightly salted water until soft.

    Prepare a light roux from butter and flour, thinned with water.

    Put tomatoes through a sieve and add to roux. Season to taste.

    Bring to a boil.

    If sauce is too thick then thin with a few tablespoons of milk.
