- 1 peck tomatoes (13 1/4 lb.)
- 6 large onions
- 8 to 10 cloves garlic
- 1 bunch celery
- 3 green peppers
- 1/4 c. coarse salt
- 2 Tbsp. pepper
- 2 Tbsp. basil
Directions

1Wash and quarter tomatoes.

2Place in large kettle.

3With potato masher, mash as much as possible.

4Chop finely the onions, celery, peppers and tomatoes.

5Add seasonings; bring to boil. Simmer until most of liquid has evaporated.

6Mixture is like thick cream, then press through cone (can take hours!).

7Makes 10 1/2 pints.
