- 2 (28 oz.) cans Italian style plum tomatoes with liquid
- 1/2 c. extra virgin olive oil
- 2 cloves garlic, chopped fine
- 2 1/4 Tbsp. chopped parsley
- 1/4 tsp. fresh ground black pepper
- 1 tsp. kosher salt
Directions

1Blend tomatoes at a low speed until smooth, one can at a time. Return to cans.

2Heat the olive oil in a medium saucepan over medium heat.

3Add garlic and parsley.

4Saute until you can smell garlic.

5Add tomatoes slowly.

6Bring to a boil.

7Reduce heat, stir in salt and pepper and simmer, stirring occasionally, about 35 to 40 minutes or until thick.
