  • 4 bunches scallions, remove tips and bottoms
  • 3 medium or 2 large onions, peeled
  • 1 large head garlic, peeled
  • 1 sprig celery
  • 1 bunch parsley
  • 1 bunch thyme
  • 1 inch fresh ginger, peeled
  • 1 c. vinegar
  • pinch of salt

Directions

    Wash herbs.

    Peel scallions, onions and garlic.

    Put in blender with vinegar; add salt.

    Store in clean bottles. Refrigerate.
