Ingredients

  • 14 qt. ripe tomatoes or 1/2 bushel
  • 7 medium onions
  • 1 small bunch celery, (4 stalks)
  • 14 sprigs parsley
  • 3 bay leaves
  • 14 Tbsp flour
  • 14 Tbsp. butter
  • 3 Tbsp salt
  • 8 Tbsp sugar
  • 2 tsp pepper

Directions

    Wash and cut up tomatoes, onions, celery and put parsley in. Cook until celery

    tender. Put through sieve. Add bay leaves. Take a little hot tomato juice out, melt butter in it and add to flour to make a paste.
