Ingredients
- 3/4 c. butter
- 2 Tbsp. olive oil
- 1 large onion, thinly sliced
- 1/2 tsp. thyme
- 1/2 tsp. basil
- salt and pepper to taste
- 3 Tbsp. tomato paste
- 1/4 c. all-purpose flour
- 3 3/4 c. chicken broth
- 1 (2 lb. 3 oz.) can Italian tomatoes
- 1 tsp. sugar
- 1 c. cream
Directions

1Heat 1/2 cup of the butter in large pot and add olive oil.

2Add the onions, thyme, basil, salt and pepper.

3Cook, stirring occasionally, until onion is wilted.

4Add the tomatoes and tomato paste and stir to blend.

5Simmer 10 minutes.

6Place flour in small bowl and add 5 tablespoons chicken broth, stirring to blend.

7Stir into tomato mixture.

8Add remaining broth and simmer 30 minutes. Put soup through blender.

9Return to heat and add sugar and cream. Simmer 5 minutes.

10Swirl in remaining butter and top with croutons.
