Tomato Stuffed Bacon Rolls

- 6 bacon, slices
- 12 cherry tomatoes
- 14 cup thinly sliced iceberg lettuce
- 2 tablespoons lemon horseradish aioli
- 18 teaspoon black pepper
Directions

1Cut bacon strips in half crosswise.

2Place in muffin tin, overlapping ends by 1/4 inch to form a tube.

3Press bacon toward outside to open center of tube.

4Bake until bacon starts to crisp, 15-20 minutes.

5Remove rolls and let cool.

6With a sharp knife, remove 1/4 of each tomato from top.

7In a bowl, combine lettuce, 1 tablespoon aioli and pepper and toss well to coat.

8Divide tomatoes equally among bacon rolls, cut side up.

9Garnish with lettuce.
