  • 1 3/4 pounds spinach (leaves only), rinsed
  • salt and freshly ground white pepper to taste
  • pinch of grated nutmeg
  • 1 clove garlic, peeled
  • 3 large tomatoes
  • 3 tablespoons beef stock
