  • 1 lb. ground beef
  • 2 Tbsp. butter or margarine
  • 1 small onion
  • 1/2 c. ground parsley
  • 1/4 c. blanched slivered almonds
  • 1 tsp. cinnamon
  • 1 1/2 tsp. salt
  • 2 Tbsp. sugar
  • 1/2 c. uncooked converted rice
  • 6 to 8 fresh unpeeled medium tomatoes
  • 4 quartered raw potatoes

Directions

    Cook meat, butter and onion until browned in saucepan or electric skillet.

    Add parsley, almonds, cinnamon, salt and sugar. Simmer 5 minutes.

    Add rice.

    Cook over low heat 5 minutes. Hollow out tomatoes, reserving pulp and juice.

    Fill with rice mixture.
