- 1 lb. Sweet Italian Sausage
- 2 (4 oz.) Jars Pimentos (Drained, Sliced)
- 1 Egg
- 8 oz. Ricotta Cheese
- 2 Ready made 9-inch Pie Crusts
- 8 oz. Mozzarella Cheese (Shredded)
- 1 tsp. Basil or Oregano

11. Remove casing fron sausage and brown (crumble), and drain on paper towel. 2. Separate egg, mix yoke with ricotta cheese and basil or oregano.

2Roll first pie crust to fit 9-inch pie plate. 3. Sprinkle 1/2 mozzarella, 1/2 sausage, all pimentos, all ricotta cheese mixture, then 1/2 sausage, 1/2 the mozzarella. 4. Roll second pie crust to fit top.

3Use pastry brush to brush top of pie crust with egg whites.

4Bake at 375° for 25 minutes.

5Cover with foil after 15 minutes if crust is getting too brown.
