Tortellini Spinach Soup

- 1 tablespoon olive oil
- 1 cup carrot, sliced
- 12 cup onion, chopped
- 14 cup celery, chopped
- 1 garlic clove, minced
- 3 (14 1/2 ounce) cans chicken broth
- 1 (14 1/2 ounce) can cream of chicken soup (optional)
- 9 ounces cheese-filled tortellini
- 2 cups spinach, fzn cut-leaf
- 12 teaspoon dried oregano leaves, crushed
- 12 cup mozzarella cheese, shredded
Directions

1--saute carrots, onion, celery, and garlic until onion is tender.

2--add broth; bring to a boil.

3--add tortellini; boil gently 4-5 minutes.

4--add spinach and oregano; simmer 2-3 minutes.

5sprinkle each serving with mozzarella.
