- 2 lb. beef or chicken
- 3 chopped potatoes
- 2 chopped onions
- 2 crushed garlic cloves
- 2 heaped Tbsp. curry powder
- 2 peeled and chopped tomatoes
- 2 Tbsp. oil
- 1 Tbsp. vinegar
- 1 tsp. sugar
- 1 c. water
- pinch of salt
Directions

1Fry onions and garlic in oil.

2Add curry powder and tomatoes; cook over low heat for a few minutes.

3Add meat and brown.

4Add all remaining ingredients; simmer for 1 to 1 1/2 hours.

5Serve over rice.

6Top with coconut, chopped dried fruit, chopped tomatoes and onions, banana, raisins, etc.
