- 3 Tbsp. olive oil
- 2 cloves minced garlic
- 1 lb. sweet Italian sausage, casings removed
- 1 medium onion, chopped
- 1/2 c. dry red wine
- 2 lb. diced Roma tomatoes
- 6 oz. tomato paste
- 1 tsp. sugar
- 3 Tbsp. fresh oregano, minced
Directions

1Heat olive oil in large saucepan.

2Add garlic and stir.

3Add sausage and brown.

4Add onions and tomatoes and stir, cooking, for 4 minutes.

5Mix in wine, tomato paste and sugar.

6Reduce heat and simmer for 20 minutes.

7Stir in fresh oregano and remove from heat.

8Serve over cooked pasta.
