- 4 cups all purpose flour
- 1/4 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 cup (1/2 stick) chilled unsalted butter, cut into pieces
- 1 3/4 cups (about) buttermilk
- 2 tablespoons dark molasses

1Preheat oven to 425F.

3Combine first 5 ingredients in large bowl.

4Add butter and rub in with fingertips until mixture resembles fine meal.

5Whisk 1 cup buttermilk and dark molasses in medium bowl to blend.

6Mix buttermilk mixture into dry ingredients.

7Gradually mix in enough remaining buttermilk to form soft dough.

8Knead on lightly floured surface just until dough holds together.

9Shape into 8-inch round, about 1 1/2 inches high.

10Cut into 4-wedges.

11Transfer wedges to prepared sheet, spacing apart.

12Bake until deep golden brown, about 30 minutes.
