Treasure Chicken Divan

Ingredients

  • 1 (6 oz.) box long grain and wild rice with herb seasoning
  • 2 (10 oz.) pkg. frozen broccoli
  • 2 to 3 c. raw chicken breast (enough for 1 layer), cut in chunks
  • 1 can water chestnuts, drained and sliced
  • 1/2 c. fat-free mayonnaise
  • 1 can low-fat cream of mushroom soup

Directions

    Cook rice and broccoli as directed on package.

    In a 9 x 13-inch baking dish, layer rice, then chicken, then broccoli.

    In another dish, mix water chestnuts, mushroom soup and mayonnaise. Spread over layered ingredients.

    Bake at 350° for 40 minutes.

    If desired, sprinkle with Parmesan cheese and bake an additional 5 to 10 minutes.
