Ingredients
- 1 can tuna
- 1 medium potato, grated
- 1 egg
- 1 chopped onion
- 1 Tbsp. flour
- dash of salt and pepper
- cracker crumbs for coating
- 1 c. soy sauce
- 4 garlic cloves, finely chopped
- 1 beef tenderloin, whole and trimmed
- 1/3 c. olive oil
- 1/2 c. sherry
Directions

1Mix soy sauce, garlic, olive oil and sherry together and marinate tenderloin for several hours or overnight, turning several times.

2When ready to cook, roast on rack in 425° oven for 28 to 30 minutes.

3Baste with marinade from time to time.
