Tuna Gumbo

Ingredients
- 2 Tbsp. margarine
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 tsp. minced garlic
- 1 Tbsp. flour
- 1 can chicken broth
- 1 can crushed tomatoes (and juice)
- 1/4 c. parsley
- 1 bay leaf
- 1/2 tsp. salt
- 1/4 tsp. thyme
- 1 (12 1/2 or 13 oz.) can tuna, drained
- 10 oz. frozen cut okra or fresh
- 1 tsp. lemon juice
- 1 1/2 tsp. Worcestershire sauce
- dash of cayenne pepper
- 3 c. rice, cooked
Directions

1Melt margarine in a large pot.

2Add onion, green pepper and garlic. Saute for about 5 minutes. Combine flour and chicken broth.

3Mix well. Add to onion mixture, stirring constantly. Add tomatoes and seasonings.

4Bring to a boil.

5Cover and simmer 30 minutes. Prepare rice according to package directions.

6Add tuna and okra to sauce. Simmer for 10 minutes. Stir lemon juice, Worcestershire sauce and cayenne pepper.

7Serve over rice.
