Turkey Basil Summer Rolls

  • cooking spray
  • 34 lb lean ground turkey
  • 12 teaspoon Thai seasoning
  • 14 teaspoon black pepper
  • 18 teaspoon salt
  • 34 cup cabbage and carrot coleslaw mix
  • 6 (8 inch) round sheets rice paper
  • 12 basil leaves
  • 6 tablespoons low-fat sesame ginger salad dressing

    Heat a large non-stick skillet over medium-high.

    Coat pan with cooking spray.

    Add turkey and next three ingredients to pan; cook 5-7 minutes, or until turkey is no longer pink.

    Combine turkey and coleslaw mix in a medium bowl.

    Add hot water to a large, shallow dish to a depth of 1 inch.

    Place 1 rice paper sheet in dish; let stand 30 seconds, until just soft.

    Place sheet on a flat surface.

    Arrange 2 basil leaves on top third of sheet.

    Arrage 1/3 cup turkey mixture on bottom third of sheet.

    Folding sides of sheet over filling and starting with filled side, roll up jelly-roll fashion.

    Gently press seam to seal.

    Place roll, seam side down, on a serving platter, and cover with a damp towel.

    Repeat procedure with remaining sheets, basil, and turkey.

    Slice each roll in half diagonally.
