- 2 pkg. 13 bean soup mix (Kroger; soak beans overnight) or 1 pkg. bean soup mix (from honey baked ham), prepare per instructions; do not use ham flavoring
- 2 cans diced tomatoes
- 1 small can V-8 juice
- 1 large onion, chopped
- pepper to taste
- 3 chicken bouillon cubes
- approximately 2 c. or more chopped turkey (save bits from cooked turkey or turkey breast)
Directions

1After beans have been soaked overnight, drain beans and rinse. Put all ingredients into an 8-quart kettle.

2Rinse tomato cans with water and pour water into soup mixture.

3Start cooking on high until hot.

4Lower heat.

5Cover and let simmer, stirring occasionally.

6I let mine simmer on lowest heat most of the day. The soup will be thick like a stew.

7Soup may be frozen for future use.
