Ingredients
- 1 c. cooking oil
- 1 c. all-purpose flour
- 2 large stalks celery, chopped
- 3 large onions, chopped
- 1 Tbsp. Worcestershire sauce
- 1/2 c. chopped parsley
- turkey carcass/turkey cubes
- 1 green pepper, chopped
- 1 clove garlic, minced
- 2 bags frozen okra and tomatoes
- 4 qt. cold water
- 2 tsp. Tabasco
- 1/2 c. green onions (tops and bottoms chopped)
Directions

1In a heavy pot, heat oil.

2Add flour and stir constantly until the roux is brown, about 20 to 25 minutes.

3Add the celery, onions, green pepper, garlic, okra and tomatoes.

4Saute, stirring occasionally for about 15 minutes.

5Add cold water all at once with salt, pepper, Worcestershire sauce and Tabasco.

6Bring to a rapid boil.

7Add turkey carcass.

8Reduce heat and simmer for about 1/2 hour or longer until stock is rich.

9Taste for seasoning.

10Add turkey cubes, parsley and green onions.

11Cook for 10 minutes longer.

12Serve with rice.
