  • 1/3 cup unsalted butter at room temperature
  • 1 clove garlic crushed
  • 1 teaspoon tarragon finely chopped
  • 1 teaspoon grated lemon zest finely
  • 3 teaspoons lemon juice
  • 6 ounces turkey breasts
  • 1/3 cup all purpose flour
  • 1 large egg lightly whisked
  • 1 1/2 ounces breadcrumbs
  • vegetable oil to shallow-fry
  • broccoli Steamed, to serve
  • beans Steamed, to serve
  • lemon wedges to serve

    Combine butter, garlic, tarragon, zest and juice in a bowl. Shape butter mixture into a log. Cover in plastic wrap and twist ends to enclose. Freeze for 20 minutes or until firm.

    Using a small sharp knife, cut horizontally into short side of each turkey breast to create a pocket. Slice butter log into 4 equal slices; place 2 slices in each pocket. Secure with a toothpick. Place flour, egg and breadcrumbs in 3 separate shallow bowls. Dip turkey into flour to coat, then egg, then breadcrumbs.

    Preheat oven to 400°F. Heat oil in a large heavy-based saucepan over moderate heat. Shallow-fry turkey for 2 minutes each side or until golden. Using a slotted spoon, transfer to a baking sheet. Bake for 15 minutes or until cooked. Serve turkey with broccoli, beans and lemon wedges.
