- 1 lb uncooked ground turkey breast
- 1 tablespoon canola oil
- 1/2 cup scallion, sliced
- 2 medium garlic cloves, minced
- 1 teaspoon ground cinnamon (to taste)
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 cup chunky salsa
- 1 large mango, cubed
- 2 cups cooked brown rice, kept hot
Directions

1Cook turkey in a large skillet over medium-high heat until browned, stirring occasionally, about 5 minutes.

2Drain off any fat.

3Add oil to skillet and heat until sizzling.

4Stir in scallions, garlic, cinnamon, coriander, cumin, oregano and thyme.

5Cook, stirring, for 2 minutes.

6Gently stir in hot or medium chunky salsa and mango.

7Cover and cook until heated through, about 2 minutes more.

8Serve over brown rice.
