Turkey Meatballs

  • 1 1/2 lb. ground turkey
  • 3 garlic cloves
  • 1 small onion
  • 1 1/2 oz. shelled chopped pistachio nuts
  • 1/4 c. grated Parmesan cheese
  • 1/4 tsp. salt
  • 2 egg whites
  • 2 Tbsp. olive oil
  • 1/2 c. nonfat yogurt

Directions

    Place turkey in bowl.

    Chop garlic, then onion in food processor and add to turkey.

    Add nuts, cheese, salt and egg whites.

    Mix well and shape into balls.

    Put oil in large skillet. Heat oil for 2 to 3 minutes, then cook meatballs.

    Serve with yogurt as sauce or may bake meatballs in 350° oven for 30 minutes.
