Turkey Pot Pie Soup

Ingredients

  • 1/4 cups Butter Plus 1 Tablespoon
  • 1 whole Onion, Chopped
  • 1/2 cups Flour
  • 4 cups Chicken Broth
  • 2 cups Milk - I Used Skim
  • 1 cup Frozen Sliced Carrots
  • 2 cups Baby Red Potatoes, Cut Into 1-inch Pieces
  • 1 cup Frozen Peas
  • 1 cup Frozen Corn
  • 2 whole Chicken Bouillon Cubes
  • 1 Tablespoon Fresh Thyme
  • 1 teaspoon Garlic Powder
  • 3 cups Cooked Turkey, Chopped Into Pieces (can Substitute Chicken)

Directions

    In a large soup pot add the butter and the onions and cook for 3-4 minutes. Then add the flour and cook for another minute.

    Slowly add in the chicken broth and the milk while whisking so there are no lumps.

    Then add in the remaining ingredients. Cover with a lid and cook on simmer for 10-15 minutes or until the potatoes are fork tender. Then serve.
