- 4 turkey thighs or legs or one turkey breast approximately 4 to 5 lbs (2.3 kg).
- 1 1-2/3 oz (45.5 grm). package enchilada sauce mix
- 1 6 oz (168 grm). can tomato paste
- 1/2 cup (125 ml) water
- 1 cup (225 ml) grated Monterey Jack cheese
- cooked white rice
- sliced green onions
- sour cream
Directions

1Place turkey parts in slow cooker.

2Combine mix, tomato paste, and water and spread over meat.

3Cover and cook on low setting 7 to 8 hours or until tender.

4Remove bones, cartilege, etc.

5Shread meat with two forks.

6Turn crockpot to high and stir in cheese until melted.

7Serve over cooked rice and garnish with sour cream and green onions.
