  • 2 lb. ground turkey
  • 1/4 tsp. coarse black pepper
  • 1/2 tsp. coarse red pepper
  • 2 Tbsp. mustard seed
  • 2 Tbsp. caraway seed
  • 2 Tbsp. Tender Quick salt (Morton, meat cure)
  • 1/2 tsp. onion salt
  • 1 Tbsp. liquid smoke (hickory is best)
  • 1 c. water

    Mix well together.

    Make into two rolls.

    Wrap into foil and chill 24 hours.

    Place on cookie sheet and bake at 350° for 1 hour.

    Cool in juice and re-wrap in fresh foil or freezer bag. Refrigerate or freeze.
