- 2 lb. ground turkey
- 1/4 tsp. coarse black pepper
- 1/2 tsp. coarse red pepper
- 2 Tbsp. mustard seed
- 2 Tbsp. caraway seed
- 2 Tbsp. Tender Quick salt (Morton, meat cure)
- 1/2 tsp. onion salt
- 1 Tbsp. liquid smoke (hickory is best)
- 1 c. water
Directions

1Mix well together.

2Make into two rolls.

3Wrap into foil and chill 24 hours.

4Place on cookie sheet and bake at 350° for 1 hour.

5Cool in juice and re-wrap in fresh foil or freezer bag. Refrigerate or freeze.
