  • 1 lb. pork meat, cut in pieces
  • 3 Tbsp. flour
  • 1/2 c. onions, chopped
  • 1/2 c. celery, chopped
  • 1/2 c. bell pepper, chopped
  • 6 large turnips, cut in pieces
  • 3 Tbsp. oil
  • 1/4 c. onion tops, chopped
  • 1/4 c. parsley, chopped
  • 4 c. water

    Brown pork in oil; remove.

    Add flour to oil for roux.

    Add water, seasonings and pork.

    Cook on low fire for one hour.

    Add turnips and cook for one-half hour.

    Add onion tops and parsley. Serve over rice.
