Ingredients
- 1 1/2 lb. turtle meat
- 1 Tbsp. flour
- 1 small onion, chopped
- 1 Tbsp. oil
- 2 hard-boiled eggs
- 1 tsp. ground cloves
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 can tomato sauce
- 1 c. fruit juice wine
- 1/2 sliced lemon
- dash of garlic powder
- salt and pepper to taste
Directions

1Clean turtle and cut into small pieces.

2Boil in salt water until very tender.

3Bone and save stock.

4Brown flour and onion in oil over low heat.

5Mash two hard-boiled egg yolks with cloves, cinnamon and nutmeg.

6Blend well and add tomato sauce.

7Add tomato mix and boned meat to stock.

8Boil 30 minutes.

9Add juice or wine, lemon and garlic.

10Add egg whites.

11Season with salt and pepper. Serves 4.
