- 1 lb. turtle for stewing (green, jellylike part)
- 4 medium size potatoes
- 1 onion
- 1 c. tomato
- 1 sweet pepper
- 1 c. sherry
Directions

1Scald the turtle with boiling water and the hard shell.

2Clean well with lime, then season with salt, black pepper and garlic. Sprinkle with capers and Worcestershire sauce and let stand for 1 to 2 hours.

3Chop onions, tomatoes and sweet pepper.

4Saute these ingredients in oil and butter.

5Add turtle and allow to brown, then pour on 2 cups of warm water and steam until tender.

6Quarter potatoes and add to stew.

7Let simmer until gravy thickens.

8Add sherry just before serving.

9Serve piping hot.
