- 1 top, bottom, or eye of round roast (5 lb.)
- 3 Tbsp. cooking oil
- 1 c. red wine
- 1 c. water
- 2 green peppers, chopped
- 2 large tomatoes, seeded and chopped
- 2 c. pitted ripe black olives, quartered
- 1 bunch green onions, diced
- 2 cloves garlic, crushed
- 1 tsp. salt
- 2 Tbsp. wine vinegar
- 1/2 c. melted butter
Directions

1Brown beef on all sides in oil.

2Add wine and water to meat. Cover and simmer 2 1/2 to 3 hours until meat is fork-tender.
