  • 1 top, bottom, or eye of round roast (5 lb.)
  • 3 Tbsp. cooking oil
  • 1 c. red wine
  • 1 c. water
  • 2 green peppers, chopped
  • 2 large tomatoes, seeded and chopped
  • 2 c. pitted ripe black olives, quartered
  • 1 bunch green onions, diced
  • 2 cloves garlic, crushed
  • 1 tsp. salt
  • 2 Tbsp. wine vinegar
  • 1/2 c. melted butter

    Brown beef on all sides in oil.

    Add wine and water to meat. Cover and simmer 2 1/2 to 3 hours until meat is fork-tender.
