  • 1 can (16oz) White Beans such as Canneline or Great Northern. Drained and rinsed.
  • 2T olive oil
  • 1T chopped fresh thyme or 1t dried
  • 2t fresh lemon juice (1 lemon)
  • 1 clove garlic finely chopped
  • 1/4 chopped fresh arugula
  • 1 baguette

Directions

    Combine beans, oil, thyme, lemon juice and garlic in a food processor. Process until smooth. Transfer the bean puree to a small bowl. Stir in arugula. Season with salt and pepper.
