- 2 eggs
- 4 Tbsp. butter or margarine
- 4 Tbsp. whipping cream
- dash of salt
- dash of pepper
- 3/4 c. shredded Cheddar or Monterey Jack cheese
Directions

1Rinse and scrub potatoes.

2Pat dry.

3Prick a few times with a fork and bake at 375° for about 1 hour or until soft.

4Cut a thin slice off the top of each potato carefully.

5Scoop out the pulp. Put in a bowl.

6Separate eggs.

7Add egg yolks to potato pulp. Stir and blend until smooth.

8Add butter and cream.
-
9Season to taste with salt and pepper.
