Two-Cheese Spinach Bake

  • 1 cup all-purpose flour
  • 2 eggs, lightly beaten
  • 1 cup milk
  • 14 cup butter or 14 cup margarine, melted
  • 12 small onion, chopped
  • 2 tablespoons grated parmesan cheese
  • 2 garlic cloves, minced
  • 12 teaspoon salt
  • 18 teaspoon cayenne pepper
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup shredded monterey jack cheese
  • 12 cup shredded cheddar cheese

Directions

    In a large bowl, whisk the flour, eggs, milk, butter, onion, parmesan cheese, garlic, salt and cayenne until combined.

    Fold in spinach and both monterey jack and cheddar cheese.

    Transfer to a greased 1-1/2-qt.

    Bake, uncovered, at 350 degrees for 40 minutes, or until a knife inserted near the center comes out clean.
