Two Corn Casserole

- 1/3 c. margarine or butter
- 3/4 c. chopped green pepper
- 1/2 c. chopped onion
- 1 can Green Giant cream-style corn
- 1 can Green Giant whole kernel corn
- 3 eggs, well beaten
- 1 (8 1/2 oz.) pkg. corn muffin mix
- 1 c. shredded Cheddar cheese
Directions

1Heat oven to 350°.

2Grease a 2-quart casserole dish.

3In a small skillet, melt margarine.

4Add green peppers and onions. Save until crisp-tender.

5In a large bowl, combine cream-style corn, whole kernel corn, eggs and corn muffin mix; blend well. Add onion mixture, mix well and pour into casserole dish. Sprinkle with Cheddar cheese.

6Bake at 350° for 55 to 60 minutes or until firm and set.

7Let stand 5 minutes before serving, approximately 12 cup serving.
