  • 1/2 c. margarine
  • 3/4 c. chopped green peppers
  • 1/3 c. onion
  • 3 eggs, beaten
  • 1 (7 oz.) can cream-style corn
  • 1 (7 oz.) can whole kernel corn (with liquid)
  • 8 1/2 oz. pkg. corn muffin mix
  • 1 c. Cheddar cheese, shredded

Directions

    Preheat oven to 350°. Saute green peppers and onions in margarine. Combine with remaining ingredients, except cheese. Pour into greased 2-quart casserole and sprinkle with cheese. Bake 45 to 55 minutes. Let stand 5 minutes before serving.
