  • 1/2 c. margarine
  • 3/4 c. chopped green pepper
  • 1/3 c. chopped onion
  • 17 oz. can cream-style corn
  • 17 oz. can whole kernel corn
  • 3 eggs, well beaten
  • 8 1/2 oz. pkg. corn muffin mix
  • 4 oz. (1 c.) shredded Cheddar cheese

    Heat oven to 350°.

    Grease 2-quart casserole.

    In a small skillet, melt margarine.

    Add green pepper and onion; saute until crisp-tender.

    In a large bowl, combine cream-style corn, whole corn, eggs and corn muffin mix.

    Blend well.

    Add onion mixture; mix well.

    Pour into casserole.

    Sprinkle with Cheddar cheese. Bake at 350° for 55 to 60 minutes.
