- 1/2 c. margarine
- 3/4 c. chopped green pepper
- 1/3 c. chopped onion
- 17 oz. can cream-style corn
- 17 oz. can whole kernel corn
- 3 eggs, well beaten
- 8 1/2 oz. pkg. corn muffin mix
- 4 oz. (1 c.) shredded Cheddar cheese
Directions

1Heat oven to 350°.

2Grease 2-quart casserole.

3In a small skillet, melt margarine.

4Add green pepper and onion; saute until crisp-tender.

5In a large bowl, combine cream-style corn, whole corn, eggs and corn muffin mix.

6Blend well.

7Add onion mixture; mix well.

8Pour into casserole.

9Sprinkle with Cheddar cheese. Bake at 350° for 55 to 60 minutes.

10Let stand 5 minutes before serving.
