- 1 1/2 c. chicken broth
- 3/4 c. sliced celery
- 1/2 c. chopped onion
- 1/4 c. uncooked barley
- 1/4 c. uncooked brown rice
- 3 tsp. dried parsley flakes
- 1 Tbsp. margarine or butter
- 1 1/2 tsp. grated lemon peel
Directions

1In medium saucepan, bring chicken broth to a boil.

2Stir in celery, onion, barley and rice.

3Reduce heat.

4Cover; simmer 45 to 50 minutes until barley and rice are tender and liquid is absorbed. Add parsley, margarine and lemon peel; toss with fork to blend. Makes 4 servings.
