- 6 cups bread crumbs
- 3 tablespoons sage
- 1/2 cup bacon cooked
- 4 ounces butter
- 4 each shallots chopped
- 2 large eggs
- 1 x salt and black pepper
- 1/2 each lemon
Directions

1Wash and dry goose.

2Cut off any excess fat from around neck cavity.

3Prick skin well all over.

4Rub skin with lemon, and season.

5Fry shallots in butter until softened, mix with breadcrumbs, sage and bacon, season and bind with eggs, and use to stuff bird.

6Sew up.

7Place in a very hot oven, 475 degrees F, for 10 minutes.

8Then reduce heat to 340 degrees F, and cook for 3 1/2 to 4 hours.

9Serve with applesauce.
