- 2 cups Plain, low-fat Greek yogurt
- 2 English or Persian cucumber
- 1 clove Garlic - minced
- 1 tablespoons Lemon juice
- 1 tablespoons Olive oil
- 1 teaspoons Grated lemon zest
- 1 teaspoon Salt
- 1/2 tablespoon Black pepper
Directions

1Chop 1 cucumber into matchsticks. Note: if using small cucumbers, may need 2 for this step. If using an American (huge) cucumber - will need to peel it, de-seed it, and use approx. 1/2 cucumber.

2Slice another cucumber very thin (see above for tips).

3Stir together yogurt, matchsticked cucumber, garlic, lemon juice, and olive oil in a bowl.

4Add lemon zest, salt, and pepper. Whisk until smooth.

5Pour into a serving dish, cover tightly, and refrigerate 8 hours.

6Keep the sliced cucumber to serve as a side/topping.
