Ingredients

  • 2 cups Plain, low-fat Greek yogurt
  • 2 English or Persian cucumber
  • 1 clove Garlic - minced
  • 1 tablespoons Lemon juice
  • 1 tablespoons Olive oil
  • 1 teaspoons Grated lemon zest
  • 1 teaspoon Salt
  • 1/2 tablespoon Black pepper

Directions

    Chop 1 cucumber into matchsticks. Note: if using small cucumbers, may need 2 for this step. If using an American (huge) cucumber - will need to peel it, de-seed it, and use approx. 1/2 cucumber.

    Slice another cucumber very thin (see above for tips).

    Stir together yogurt, matchsticked cucumber, garlic, lemon juice, and olive oil in a bowl.

    Add lemon zest, salt, and pepper. Whisk until smooth.

    Pour into a serving dish, cover tightly, and refrigerate 8 hours.

    Keep the sliced cucumber to serve as a side/topping.
