- 1 cup sugar
- 3 cups unsweetened coconut, shredded
- 3 egg whites, lightly beaten
- 1 teaspoon vanilla extract
- 1 pinch salt
Directions

1Preheat oven to 350.

2Combine all ingredients in a large bowl and mix well with a rubber (silicone) spatula or your hands.

3Wet your hands and take out a rounded tablespoon of mix into the palm of one hand. Make either balls, cubes or pyramids.

4Place on silicone lined baking sheet.

5Bake until light brown, about 15 minutes.

6Cool on a rack at least 30 minutes before eating.

7Store in covered container for up to 3 days.
