Unusual Squash Casserole

Ingredients

  • 1 lb. ground beef
  • 1/3 c. chopped onion
  • 1 green pepper, chopped
  • 1 clove garlic, minced
  • 1 can stewed tomatoes
  • 3/4 c. precooked rice
  • 2 Tbsp. Worcestershire sauce
  • salt and pepper
  • 3 medium squash (yellow or zucchini)
  • 1 1/2 c. shredded Cheddar cheese
  • 1/2 c. Monterey Jack cheese
  • 1 c. sour cream

Directions

    Brown meat, onion and garlic; drain.

    Add tomatoes, rice, Worcestershire sauce, salt and pepper to taste.

    Cover and simmer 7 to 10 minutes.

    Chop or slice squash, boil about 5 minutes.

    Add 1 cup Cheddar cheese to meat mixture and place half in bottom of 2-quart casserole.

    Add squash, sprinkle with Monterey Jack cheese, remaining meat mixture, sour cream and remaining Cheddar cheese. Bake, uncovered, 25 to 30 minutes at 350°.
