  • 3/4 lb. Canadian bacon, sliced
  • 1 c. maple syrup
  • 2 eggs
  • 1 1/2 c. all-purpose flour
  • 1 1/2 c. milk
  • 1/4 c. melted butter
  • 1 Tbsp. + 1 1/2 tsp. baking powder
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 (15 oz.) can chunky applesauce

    Arrange bacon slightly overlapping in a 13 x 9-inch ungreased pan.

    Pour syrup over bacon.

    Beat eggs in 1-quart bowl until foamy; beat in remaining ingredients, except applesauce, until smooth.

    Pour over bacon and syrup.

    Bake uncovered in a 400° oven for 20 to 25 minutes.

    Meanwhile, heat applesauce to just warm. Cut pancakes into 8 pieces and top each with applesauce.
