- 3/4 lb. Canadian bacon, sliced
- 1 c. maple syrup
- 2 eggs
- 1 1/2 c. all-purpose flour
- 1 1/2 c. milk
- 1/4 c. melted butter
- 1 Tbsp. + 1 1/2 tsp. baking powder
- 1 Tbsp. sugar
- 1/2 tsp. salt
- 1 (15 oz.) can chunky applesauce
Directions

1Arrange bacon slightly overlapping in a 13 x 9-inch ungreased pan.

2Pour syrup over bacon.

3Beat eggs in 1-quart bowl until foamy; beat in remaining ingredients, except applesauce, until smooth.

4Pour over bacon and syrup.

5Bake uncovered in a 400° oven for 20 to 25 minutes.

6Meanwhile, heat applesauce to just warm. Cut pancakes into 8 pieces and top each with applesauce.
