  • 2 teaspoons Olive Oil
  • 1 cup Sliced Onion
  • 1 cup Chopped Peppers (green, Red, Yellow)
  • 7 ounces, weight Canned Mushrooms, Drained (one Small Can)
  • 1 cup Pepperoni Slices, Roughly Chopped
  • 1/2 cups Sliced Olives (green Or Black)
  • 1 cup Marinara Sauce (plus More, If Needed To Moisten The Filling)
  • 2 cups Shredded Mozzarella Cheese
  • 1 whole Egg
  • 1/2 cups Milk
  • 1/2 Tablespoons Olive Oil
  • 1/2 cups All-purpose Flour
  • 1/4 teaspoons Kosher Salt
  • 1/4 teaspoons Freshly Ground Black Pepper
  • 2 Tablespoons Grated Parmesan Cheese

Directions

    Preheat oven to 400 degrees F. Grease an 8 x 8 inch baking dish and set aside.

    Heat oil in large skillet over medium heat.

    Add onions, peppers and a pinch of salt and saute until vegetables are soft, stirring frequently, about 10 minutes.

    Add mushrooms, pepperoni and olives and cook for 4-5 additional minutes.

    Add marinara sauce, bring to a simmer, and cook for 2 minutes.

    Add more sauce, if needed.

    Transfer filling to the prepared dish.

    Spread evenly across the bottom of the dish and top with mozzarella cheese.

    In a medium bowl, whisk together egg, milk and oil.

    Whisk in flour, salt and pepper until well blended.

    Pour mixture evenly over filling.
