- 2 teaspoons Olive Oil
- 1 cup Sliced Onion
- 1 cup Chopped Peppers (green, Red, Yellow)
- 7 ounces, weight Canned Mushrooms, Drained (one Small Can)
- 1 cup Pepperoni Slices, Roughly Chopped
- 1/2 cups Sliced Olives (green Or Black)
- 1 cup Marinara Sauce (plus More, If Needed To Moisten The Filling)
- 2 cups Shredded Mozzarella Cheese
- 1 whole Egg
- 1/2 cups Milk
- 1/2 Tablespoons Olive Oil
- 1/2 cups All-purpose Flour
- 1/4 teaspoons Kosher Salt
- 1/4 teaspoons Freshly Ground Black Pepper
- 2 Tablespoons Grated Parmesan Cheese
Directions

1Preheat oven to 400 degrees F. Grease an 8 x 8 inch baking dish and set aside.

2Heat oil in large skillet over medium heat.

3Add onions, peppers and a pinch of salt and saute until vegetables are soft, stirring frequently, about 10 minutes.

4Add mushrooms, pepperoni and olives and cook for 4-5 additional minutes.

5Add marinara sauce, bring to a simmer, and cook for 2 minutes.

6Add more sauce, if needed.

7Transfer filling to the prepared dish.

8Spread evenly across the bottom of the dish and top with mozzarella cheese.

9In a medium bowl, whisk together egg, milk and oil.

10Whisk in flour, salt and pepper until well blended.

11Pour mixture evenly over filling.

12Sprinkle with Parmesan.

13Bake 25 minutes, or until golden brown.

14Let stand for 5 minutes before slicing and serving.
