Upside-Down Pumpkin Pie

Ingredients

  • 1 (29 oz.) can pumpkin
  • 1 1/2 c. sugar
  • 2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1 tsp. nutmeg
  • 1 (12 oz.) can evaporated milk
  • 3 eggs, well beaten
  • 1 box Pillsbury yellow cake mix with pudding
  • 1 c. chopped walnuts
  • 1 c. melted butter or oleo (I use one stick of each)

    In large bowl, mix first 7 ingredients.

    Pour into 9 x 13-inch baking dish.

    Sprinkle dry cake mix over pumpkin mixture.

    Drizzle melted butter over the mixture.

    Bake at 350° for 1 hour.

    Serve with Cool Whip or whipped cream.
