V8 Poached Pike

  • 1 large can V8 juice
  • 1 large onion or 1 cup finely chopped
  • 1 stalk celery finely chopped
  • 1/2 lemon sliced and halved with peel
  • 4-6 fillets northern pike
  • 1/2 TSP granulated garlic or fresh
  • to taste salt and pepper

    In a large frying pan combine onion, celery, garlic, salt, pepper, and lemon

    Fill pan with v8 juice and simmer down over medium heat for about 20 minutes uncovered.

    simmer until liquid is reduced and lemon, onion and celery are tender and well incorporated

    Cut northern pike fillets into chunks no larger than 3 inches and place evenly spaced in the pan

    Simmer Pike fillets and sauce until fish is white and flaky (about 5 minutes)

    This dish goes very well with long grain and wild rice and presents nicely when served over it
