Ingredients

  • 1 lb. pkg. large elbow macaroni
  • 1 bunch broccoli, cut into small spears
  • 1 lb. mushrooms, sliced
  • 1 pkg. frozen peas
  • 1 c. olive oil
  • 5 to 6 cloves garlic, minced
  • 1 tsp. salt
  • 1/2 tsp. crushed red pepper
  • 1/2 stick butter or margarine
  • grated Parmesan cheese

Directions

    In a large frying pan, saute garlic in olive oil.

    Add mushrooms, salt and red pepper.
  3. 3
    Saute until mushrooms are tender. In a large pot, boil broccoli about 3 minutes.

    Add peas and boil another 2 minutes.

    Remove vegetables with a slotted spoon and add to mushroom mixture.

    Simmer 10 minutes.

    In the vegetable water, boil pasta until done.

    Drain and toss with butter and cheese. Pour the vegetables over the pasta and mix.

    Top with more cheese. Mangia!
