- 2 c. old fashioned oats
- 1/3 c. frozen apple juice concentrate, thawed
- 2 Tbsp. light brown sugar
- 1 Tbsp. ground cinnamon
- 1 c. unsweetened flaked coconut (this is where the fat is)
- 1 vanilla bean, split and seeds removed
- 1 c. dried sour cherries
- 1 c. golden raisins
Directions

1Preheat the oven to 300°.

2In a large bowl, place the first 4 ingredients; toss well.

3Spread the granola onto a large cookie sheet; bake for 25 minutes, stirring occasionally.

4Stir in the coconut and vanilla seed.

5Bake for another 20 to 25 minutes, until lightly browned.

6Stir in the cherries and raisins.

7Cool and store in an airtight container for up to 1 month.

8Serves 10.
