Vanilla MINUTE Rice Pudding

Ingredients

  • 1-3/4 cups milk
  • 1/2 cup MINUTE White Rice, uncooked
  • 2 Tbsp. sugar
  • 2 Tbsp. raisins
  • 1/4 tsp. salt
  • 1 egg
  • 1 tsp. vanilla

Directions

    Combine milk, rice, sugar, raisins and salt in medium saucepan.

    Bring to boil on medium heat, stirring constantly.

    Reduce heat to medium-low; simmer 6 min., stirring occasionally.

    Mix egg and vanilla in small bowl until well blended.

    Stir in small amount of the hot milk mixture.

    Gradually add to ingredients in saucepan, stirring constantly.

    Reduce heat to low; cook 1 min.

    or until thickened, stirring constantly.

    (Do not boil.)

    Pour into serving bowl; cool slightly.

    Cover and refrigerate 2 hours or until chilled.

    Store any remaining pudding in refrigerator.
