- 4 pounds ripe peaches, peeled, halved, pitted, each half cut into 6 wedges (about 8 cups)
- 1/2 cup plus 1 Tbsp. sugar
- 1/4 cup (packed) gold brown sugar
- 1/4 cup all purpose flour
- 1/4 tsp. ground cardamom
- 1 vanilla bean, split lengthwise
- 2 flaky pie crust disks (see recipe)
- Whipping cream (for glaze)
Directions

1Position rack in lowest third of oven and preheat to 400 degrees.

2Combine peaches, 1/2 cup sugar, brown sugar, flour and cardamom in large bowl.

3Scrape in seeds from vanilla bean; discard bean.

4Toss to blend well.

5Let stand until dry ingredients are moistened, about 15 minutes.
