- 8 ounces veal
- 2 ounce noodles
- 1 cup basic red sauce
- 3 slices eggplant
- 2 ounce parmesan, parmigiano-reggiano cheese, grated
- 2 slices mozzarella cheese
Directions

1In a sauce pan saute the veal.

2Remove from the heat.

3Cook the noodles until done and drain.

4Place the noodles on the bottom of a casserole dish.

5Place the veal on top of the noodles and add the red sauce.

6Place the eggplant on top and sprinkle with the Parmesan cheese.

7Cover with the mozzarella.

8Bake at 350F (180C).

9until brown and serve.
